Stuffed Flank Steak

Inspired by my favorite meal my boyfriends parents make, this is as easy as it is delicious.


1 Flank Steak (about 1 1/2 Lbs)

1/3 C Chopped Sundried Tomatoes

1/2 C Fresh Baby Spinach

1/3 C Feta Cheese (I like the one with Mediterranean Herbs)

Extra Virgin Olive Oil

1 Tbsp Balsamic Vinegar

2 Tbsp Garlic Powder

2 Tbsp Italian Seasoning

Cracked Pepper


Toothpicks or Baking Twine


  1. Take steak out of package and hammer to tenderize. If you don't have a meat tenderizer you can use whatever will be easy to clean and will help to tenderize the meat without cutting through the meat.

  2. Smother both sides of the Flank Steak in Olive Oil, Salt and Cracked Pepper.

  3. In a bowl add Feta, Fresh Spinach, Sundried Tomatoes, Balsamic Vinegar. Mix together then spread over one side of the Flank Steak.

  4. Roll up the steak starting one of the long sides in a spiral pattern. Secure with Baking Twine or Toothpicks. Rub outside of steak with Italian Seasoning and Garlic Powder.

  5. Bake on a baking sheet at 350 Degrees Fahrenheit for 30 Minutes. Let sit 10 minutes before serving.
