Raspberry Breakfast Bars

A current favorite for breakfast or gifts. Use store bought or DIY Raspberry jam. This recipe is so easy with little mess and quick to make.



Ingredients:

For Bars Base:

2 C All Purpose Flour

1 1/2 C Rolled Oats

2/3 C Granulated Sugar

1/2 C Brown Sugar

1 Tsp Almond Extract (Optional)

1 Tsp Vanilla Extract

1/2 C Melted Unsalted Butter

1 Egg


For Crumble Topping:

1/2 C Chopped Walnuts

1/2 C Rolled Oats

1/4 C Brown Sugar

1/3 C Cubed Unsalted Butter (cold)


For Raspberry Jam:

2 Packages of Raspberries

1 Package of Blackberries

1/2 Lemon Juice

1 C Granulated Sugar


Instructions:

  1. **If using store bought Raspberry Jam, ignore step 1** In a sauce pan on medium heat add Raspberries, Blackberries, Lemon Juice, and Granulated Sugar. Crush the berries and then let simmer until it thickens (should take anywhere from 20 min to an hour depending on size of pan and stovetop. Make sure to keep stirring in short intervals so it doesn't burn). Pull off heat to cool. Keep in mind the mixture will thicken as it cools.

  2. In a large bowl, mix the ingredients of the base together with hand until when squeezed together it stays in shape.

  3. In a large bowl add the ingredients for the crumble topping. Squish the butter until they are covered in the other ingredients and in small chunks.

  4. Place base ingredients together in the bottom of a pan that has already been sprayed with oil and has parchment paper. Tap the base down with hand until well packed. Evenly spread Raspberry Jam over base and distribute crumble topping over Raspberry Jam.

  5. Bake at 350 Degrees Fahrenheit for 25-35 minutes until the Jam is boiling and the butter in the crumble mixture has melted and slightly browned.
