My grandmother would make this ceviche for us growing up. It's popular in Ecuador to eat soup with popcorn and this ceviche is best served just like that. Create the ceviche and serve with excessive amounts of popcorn on top. This recipe serves 4-6 people or is a delicious appetizer for many more.
1/2 Cup of Ketchup
1/2 Cup of hot sauce (my favorite is Valentina)
1 Cup Fresh Orange Juice
1 Cup Fresh Lime Juice
1 Red Onion Sliced Thin
2 Lbs Frozen Precooked Shrimp Peeled (no tails)
1 tsp salt
popcorn for serving
Add the shrimp to warm water to thaw.
In a large bowl combine the ketchup, hot sauce, orange juice, lime juice, and salt. Whisk to combine. Slice up the red onion thin and add to the sauce. When the shrimp is thawed add that as well.
This can be served right away but is best when it sits overnight.
